TERROIR The vineyard is planted on a ''garrigue plateau'', located in the southern part of the appellation, the area recognized as the most qualitative. The soils are particularly poor and composed of both rolled and calcareous pebbles (Miocene Sandstone and Marl), with a very old origin dating back to the quarternary era. A traditional tillage is done, combining hilling in winter and ploughing in spring and no use of weedkillers. With an exposure of the plots and a warm summer, the grapes are harvested at high maturity and concentration. The vines (average age 40 years) are planted at an altitude of 120 meters mainly on hillsides facing south-west, but also in a plain facing south. The average yield is low around 30 hl/ha. GRAPE VARIETIES Grenache 70% Syrah 30% WINEMAKING Each grape variety is vinified separately following traditional principles: total destemming, cold maceration, fermentation at controlled temperatures for about 3 weeks, with daily pumping over and "délestage" to extract the flavors and aromas. Aging minimum 12 months (each varietal separately for 6 months, then at least another 6 months after blending) in stainless steel tanks to refine the tannins and keep the freshness and aromas of red and black fruits. TASTING NOTES The nose is powerful and complex, combining aromas of very ripe and dominant red fruits, hints of liquorice. The attack is concentrated on the palate, then full-bodied with a dominant of very ripe red and black fruits. The tannins are present but remain supple and silky. The finish is long and marked by aromas of blackberries. Recognized for its finesse, this gourmet Vacqueyras will be perfect for example with red meats, such as grilled prime rib with cracked pepper and ''fleur de sel'' (raw sea salt).
