CHAVIN AOP CTX AIX EN PROVENCE RS BIO 0.75 • TASTING NOTES Pale Pink color. Notes of tangy red berries (strawberry and raspberry). Aromas of white-fleshed fruits (peach and pear) which give way to floral notes (acacia and lime blossom). Delicate and supple on the palate, velvety and fresh with very nice slightly fruity and minty notes. • WINE-MAKING & AGEING Harvest made over night to take advantage of lower temperatures. Direct press and low temperature fermentation between 16° to 18° Celsius. Ageing on fine lees in stainless steel tanks.
