Production: 24,000 bottles Terroir: clayey-gravelly soil Grapes: 100% Merlot Harvest: September 28, 2019 History of this cuvée: The name of this cuvée evokes the place where this plot is planted, cultivated in organic farming. The vines are installed there on the side of the coast, distributed by the mist, giving this green and unspoiled place an enchanting side. Vinification: The berries were regularly tasted, in order to harvest ripe fruit which will express itself during the vinification. The grapes are harvested, destemmed and sorted, then a cold pre-fermentation maceration is carried out in order to obtain a beautiful color and round tannins. Skin maceration between 25 and 28 ° C for 30 days to extract fresh aromas and melted tannins. Aging for 9 months in vats. Tasting comments:The color is garnet, dark and intense. Intense spicy nose with notes of black cherries and cassis. On the palate, this wine is rich, spicy and fruity, with good length on the finish. The tannins are fine and elegant. This cuvée expresses all the maturity of the Merlot on a gravelly soil.
