Château Les Bois Mathieu 2020

A remarkable illustration of the wealth of riches which have been conserved in the Pyrenean foothills. Set in the heart of an incredible landscape on a steep, south-westerly slope, the emblematic parcel of Bois Mathieu comprises five different grape varieties of the Saint Mont appellation. The grapes are painstakingly harvested by hand in the early hours of the morning, on a waxing-moon “fruit-day” to privilege the freshness and aromatic expression of each individual pearl. A rare purity. Out of the vineyard's 27 hectares, only two are devoted to making this great cuvee. This south/southwesterly facing, particularly steep slope facing the Pyrenees is a unique site: the gradient is over 20%; it benefits from high daytime summer temperatures and cool nights and the soil is a young formation (the Quaternary Period) of clay and pebbles. The red grape varieties are blended in equal proportions while the only white grape, the Petit Courbu, represents 10% of the blend; each grape variety brings its own aromatic touch.
