" A Grand Cru for great moments Soil - Sandyn clayish, soil located at the foot of a hill Grape varieties - Merlot 80 %, Cabernet Franc 20% - Age of the vines : 35 to 70 years old - 6000 vines/ ha Production - 14 000 bottles Vine-growing & vinification - All the vineyard is grassed and plowed every second row. - Fermentation in thermoregulated stainless steel vats - Traditional aging in barrels: One third of the production is in barrels of 500 liters to preserve the fruit by limiting the penetration of oxygen. The rest is in traditional Bordeaux barrels. - The wines are kept on their lees during all the ageing process. Tasting and consumption - Fine and elegant wine, powerful and full-bodied, supported by vanilla oak aromas blended with notes of red fruits. - A slow-evolution wine with great ageing potential Food and Wine pairing - To consume on tasty meats: pave of boar, beef rib, lamb shoulder. - On some fish cooked in red wine such as the lamprey “a la Bordelaise” - On fine dry cheeses"
