nor chemical fertilizer ; stripping and green harvesting. Vinification in thermo-regulated stainless steel vats at low temperature with regular pumping and ageing in French Oak barrels for 12 months (1/3 new barrels, 1/3 1 year old barrels,1/3 2 years old barrels)
