Picking: The grapes are harvested at night, this allows us to gather a fresher and healthier grape crop
We then process to a cold maceration to extract as much as possible the aromas. The grapes are pressed immediately after,slowly and thoroughly. The resulting juice is poured into concrete tanks where a breeding on lees will occur for the next four months. The binds about about an enjoyable smoothness, a marrowy « fatty » mouth. We keepthemin suspension by stirringthe fine lees everyday.
Pale yellow color, complex nose with aromas of candied lemon and citrus fruits. The palate isfleshy with a lot of sweetness. Persistent finish on floral notes of white flowers and citrus fruits.
Drink from the aperitif until the meal (whitemeats,seafood,foie gras,salads, etc.)

Potentialof ageing: 2-5 years in average.
