Château de Birot - White - 2017

Our white wines are the typical expression of the great sweet wines of the Cadillac region. They come from late harvest by successive sorting then vinified in vats and barrels and bottled after 12 months of aging. Sauvignon plays an important role in the blend because it brings a certain liveliness to the wine, necessary for perfect balance. These quality golden wines, marked by a perfect balance between sweetness and acidity, evolve over time and very fruity notes gradually give way to a smoothness supported by complex aromas.The food and wine pairing makes perfect sense to appreciate these sweet wines. They will go perfectly with white meats or poultry with slightly spicy sauces, cheeses and finally desserts made with white fruit.
