Manual harvest for better sorting in the vineyards and better handling of the grapes.
A traditional vinification – all varietals are processed separately. Long 4-week maceration.
The Grenache and Mourvèdre are aged for 8 months in vats. The Syrah is aged in French oak barrels, including occasional batonnage on fine lees. This type of aging allows us to maintain the fruity notes of the Grenache and the body of the Mourvèdre, while barrel-aging bring complexity and length to the wine.
