Champagne BLANC DE ROSES PURS NOIRS
Vineyards: AOC Champagne from Villenauxe La Grande. Clay soil. Vines more than 50 years old. Planting density 8,500vines/hectare. South and south-east facing plots on banks of clay. Our vines are maintained according to strict and meticulous environmentally-friendly methods.
Color: Limpid, bright pink. Small but steady bubbles
Nose: Hints of prunes, blackberries and liquorice.
Palate: Very refined, with a creamy character and a hint of mandarin on the finish.
Food matching: Veal or blue fin tuna sushi.
Vinification: Fermented in temperature controlled, stainless steel vats kept at between 14-16°C to preserve the freshness and mineral quality of the wine. The wines are left on fine lees to enhance their structure and richness and then racked. Bottling takes place in April and the wines are then transferred to our cellars where the prise de mousse takes place followed by approximately 26 months ageing on lees.
