CHAMPAGNE BLANC DE NOIRS
Vineyards: AOC Champagne from Villenauxe La Grande. Clay soil. Vines more than 50 years old. Planting density 8,500vines/hectare. South and south-east facing plots on banks of clay. Our vines are maintained according to strict and meticulous environmentally-friendly methods.
Color: Pale, yellow with flecks of silver and tiny bubbles.
Nose: fine, elegant and expressive with plenty of vivacity.
Palate: opulent yet fresh and frank on toasty, and grilled notes with honey and white flowers. Superb finish.
Food matching: white meat and fish dishes.
Serving suggestions: ideal as an aperitif
Vinification: Fermented in temperature controlled, stainless steel vats kept at between 14-16°C to preserve the freshness and mineral quality of the wine. The wines are left on fine lees to enhance their structure and richness and then racked. Bottling takes place in May and the wines are then transferred to our cellars where the prise de mousse takes place followed by approximately 26 months ageing on lees.
