Cantal Vieux PDO

Cantal Vieux is the union of local producers, milk collected exclusively around our dairy, and a recipe perfected over the seasons. For at least 4 months, our wheels (imposing in size, 40 kg!) are pampered under the watchful and expert eye of our master ripeners. As the days go by, they reveal a sumptuous dark colour, with golden touches appearing; while releasing spicy, powerful aromas and revealing their full character. This connoisseur’s cheese will be all the more appreciated when tasted on a cheese board, where it shines on its own.
