Cantal Entre-deux raw cow's milk PDO
Cantal Entre-Deux is, above all, a story of local producers, quality milk collected around our dairy, and a recipe that we have perfected over many years.
For a minimum of 4 months, the wheels (imposing in size, 40 kg!) are regularly turned and rubbed by our master ripeners. Over time, its taste subtly asserts
itself, and buttery, fruity aromas are revealed. When the cheese is made from raw milk, these flavours are even more pronounced and delightful!
