Calvados AOC Pays d'Auge Very Spécial - Michel Bréavoine
The Pays d’Auge AOC appellation requires the use of cider fruit grown strictly in the appellation area. This area is characterized by shallow clay-limestone soils and an oceanic climate with low thermal amplitude. All our ciders
are exclusively distilled in a “repasse” alembic, a traditional two-stage distillation method similar to that used for cognac or Scotch whisky.
The apple brandy is then aged for two years in oak barrels to become an authentic Pays d’Auge Calvados.
Our “ Calvados AOC Pays d’Auge Fine “ or VS is aged for 3 years in oak barrels. This calvados will be appreciated for its liveliness, strong flavors and high alcohol percentage.
Its youth gives it striking aromas of fresh apples. You’ll also find it under the VS label.
Our “Calvados AOC Pays d’Auge Fine” will be perfect as a digestif or to liven up your cocktails. In cuisine, it will be a precious ally to give your dishes a sublime touch.
