BOUZIGUES OYSTERS - SANCHEZ

The Bouzigues oysters is produced exclusively in the Bassin de Thau. The absence of tide in the Bassin de Thau, a veritable small sea separated from the Mediterranean by a dune cordon, required the implementation of a particular technique which emerged in the 1910s with the awarding of concessions. From there, we were able to see the first structures appear that could accommodate the breeding of oysters. the specificity of the Mediterranean consists in practicing farming suspension and in permanent immersion in water. These very specific characteristics give the Bouzigues oysters a note of iodine.
