TERROIR
Backed by the south-eastern slopes of the Dentelles de Montmirail massif,
this terroir is mainly made up of black marls (Jurassic grey lands).
The red wines reach the appellation «Cru» in 2005. The mother rock is
fractionated, crushed, due to a unique phenomenon in the Rhone Valley
called the Diapir de Suzette. Presence also of a stony clay-limestone soil.
Manual harvest at maturity.
VINIFICATION AND AGEING
Traditional vinification with a total scratch. A vatting of 3 to 5 weeks.
Offcuts, manual pickings, remounts to extract aromas and color.
Meticulous maturing in vats.
TASTING NOTES
A beautiful purple dress on youth. The depth of the dress announces a
rich material. This red Beaumes de Venise of a nice complexity, charm
us with its notes of red fruits (cherry, blueberry, blackcurrant) spices
and liquorice. On the palate, this elegant red wine is ample and fleshy.
Its structure built on tight tannins and generous alcohol will allow it a
beautiful evolution in time.
FOOD AND WINE PAIRINGS
To be enjoyed on a lamb shoulder, a caramelized rabbit with spices or a
Provençal beef daube.
Child care potential: 5 to 7 years
On youth, do not hesitate to carafer it or open the bottle a few minutes
before the service. The temperature of the service must be between 16
and 18°C.
