Baron d'Aupenac
VINIFICATION AND MATURING
Hand-picked when ripe, with plot selection. Carbonic maceration (whole bunches) for optimal extrac-tion of tannins and aromas. Aged in French oak barrels for 18 months, with a mix of new and one- or two-wine barrels.
TASTING
The schist soil gives this wine a com-plex aroma, dominated by black fruits such as blackcurrant and black-berry, enhanced by spicy notes of black pepper and clove. On the pal-ate, the attack is straightforward, with silky tannins and a balance be-tween acidity and sweetness. Flavors of black cherry, licorice and a touch of minerality unfold, leaving an ele-gant, persistent finish, with hints of truffle and woody accents.
SOIL
Schist slopes benefiting from a semi-altitude climate. Old vines of Syrah, Carignan and Grenache draw all the richness of the soil, expressing unique depth and complexity.
FOOD & WINE PAIRING
This wine goes perfectly with red meats such as roast lamb, game or beef bourguignon. It also goes well with mature cheeses such as Comté or Roquefort, as well as rata-touille or grilled vegetables.
