Ingredients
- Main botanicals: Juniper (predominant), coriander and angelica (root) in descending order of predominance
- Secondary botanicals: cinnamon, vanilla, maniguette (seed of paradise), Jamaican pepper, lemon peel, ginger, cardamom...
- A total of 12 botanicals in the composition
- The botanicals are supplied as locally as possible, especially coriander and angelica
Preparation
- Maceration in a stainless steel tank
- Periodic mixing of the maceration
- Long, staged maceration (not all botanicals are incorporated at the same time)
Distillation
- London Dry type distillation (botanicals are all distilled together with the maceration)
- Copper and stainless steel pot stills (which means distilling in batches - hence a limited number of bottles per batch)
- Heads and tails are separated and not reincorporated, which allows a more homogeneous aromatic profile to be maintained without batch interference
- The adjustment is made at 40% TAV
Organoleptic
- Nose :
o Intense and persistent first nose of juniper and exotic fruits
o Second nose: Good behaviour to oxidation with a long-lasting aroma, evolving towards more fresh and floral notes
- Taste :
o Frank attack of juniper and coriander but without brutality, slightly spicy whose effect dissipates quickly (impact of the seed of paradise)
o The roundness brings notes of toffee, no pronounced alcoholic heat
o Intense juniper and slightly bitter finish (due to the angelica)
o The retro olfaction varies according to the person between cinnamon and more iodized or even mineral notes
- The whole is characterised by an aromatic power as well as the intensity over time on the palate
- The cloudy hue is linked to the essential oils of the plants used in the distillation process
