Assortment composed of 30 fruit pastes made with fruits of a unique quality: raspberries from Provence, quince from the Drôme Provençale, pears from Haute Provence, apricots from Haute Provence, figs from the Haut Var and blackcurrant from Burgundy. 

The fruit, sugar and fruit pectin are gently heated and stirred slowly in an open cauldron to extract the pectin naturally present in the fruit and preserve the aromatic compounds. The arrival of a slight haze on the surface of the cooked fruit indicates that the pectin is beginning to gel and that it is time to pour the still boiling fruit paste into frames. Gelling is a slow and delicate process. The fruit paste should not be touched until the next day. Once out of its frame, the fruit paste can be cut by hand using metal strings. The pieces are then rolled in sugar.
