Our 1kg sheet of ISIGNY AOP butter is the result of some of Isigny's best creams. These are creams which acquire all their flavour notes and organoleptic qualities during a vital stage in the production process : the traditional slow maturation period. Once they have been sown with lactic starter cultures, these creams rest for 16 to 18 hours. Then, they are churned with the greatest respect for traditional techniques. This helps the formation of a butter with a particularly homogeneous texture.This butter has an excellent malleability and fine texture.
