Terroir :Clay-loam, schist subsoil. Noth-East exposition
Vinification :
Hand harvested, soarting in the vineyard. 15% of whole grape, cold maceration, 1 pump over per day. No sulphur fermentation, indigenous yeasts. Ageing for 10 months in barrels
Tasting :Grenat color. Complex nose with floral notes ( violette), stawberry and spicy aromas. On the palate, opulence and richness are well balanced with freshness and smoth tannins. Good potential of ageing.
Pairing :
To pair with meat dishes, game, cheese plate or with autumn vegetables. Serving temperature : 14-16°C
