Andean Sunside by Bayard
This is a potato of Peruvian origin whose flesh adopts a stunning orange hue when cooked due to its beta-carotene content. It also makes the most stunningly velvety mash! The Andean Sunside takes its name from its Peruvian ancestors and is the result of curious varietal weddings. Very yellow, the color intensifies during cooking to become orange with its high content of beta-carotene. Its creaminess is expressed when mashed. Flavoursome potatoes that we have unearthed, nurtured and selected for their stylish and varied properties. Over thirty varieties are available to meet every taste. They come in all sorts of shapes and sizes and (almost) every colour to serve every purpose. Maison Bayard is constantly looking for original new or ancient varieties.
