Land : limestone Vinification- sustainable production Hand harvest Full desteeming and first fermentation in tanks. Cold pre maceration for a few days. When fermentation has started, there will be footing and racking to get finesse and high fruit. Cuvaison for 21 days. Temperature control for fermentation. The cuvee is partly aged in oak (one year used barrels) and partly in tank (80%) to retain freshness for 12 months. Bottling after blending barrels and tanks with light filtration. Tasting Good rubis color. Red fruits notes (Cherry). Some mineral notes. The palate offers good balance with average refined tanins. Drink by 2022 SERVE AT 17°C – Not necessary to decant - Best served over red meats, game and strong cheeses.
