The Grape: 100% Pinot noir Vines: 40 years old The Land: Located on the hills South Burgundy, beautiful exposure which ensures good maturation of grapes. Yield: 6000 feet per hectare for average production of 50 hectoliters per hectare. Our production: Total 14000 bottles Green harvest with parcel selection at time of vinification to select best cuvees for oak ageing and other cuvees for regular ageing. Vinification: Traditional between 15 to 21 days. Cold maceration. All wines are aged in temperature controlled cellars. How to serve our Pinot noir : not over 18°C. Best with any type of meats and soft cheeses.
