Vines : Pruned short using the cordon de Royat and Guyot techniques. Density : 4,500 vines per hectare. Sustainable agriculture. Low-intensity cultivation with a minimum of supplements.
Picking : Mechanical picking at the end of September. Destemming and pressing straight after picking.
Vinification : Fermentation under controlled temperatures (28°C). Mechanical juice extraction using regular pumping-over technique. Maceration of between 10 to 15 days after fermentation.
Maturation : Aged in traditional semi-buried concrete vats covered with Languedoc bricks.
