Vines : Pruned short using the cordon double de Royat method. Density : 4,500 vines per hectare. Sustainable agriculture. Low-intensity cultivation with a minimum of supplements. Picking : Destemming, immediate crushing and clarification at 8°C for 36 hours. Vinification : Fermentation under controlled temperature (15°C) in stainless steel vats. Maturation : Aged in traditional semi-buried concrete vats covered by Languedoc bricks.
