Vines : Pruned short using the cordon double de Royat method. Density : 4,500 vines per hectare. Sustainable agriculture. Low-intensity cultivation with a minimum of supplements. Picking : The Syrah is part-picked in July while still green to allow the remaining grapes a better maturity and concentration. Mechanical with destemming and manual picking when the grapes are at their ripest, carried out very early in the morning during October. Pressing straight after picking. Vinification : Fermentation under controlled temperature (28°C). Post-fermentation maceration (soaking) of approximately 25 days. Use of pumping-over and rack-and-return techniques to obtain an optimal juice extraction. Maturation : Part-matured in 2 to 3-year old 300 litre barrels made from French oak, for 12 months.
