Vines : Pruned short using the cordon double de Royat method. Density : 4,500 vines per hectare. Sustainable agriculture. Low-intensity cultivation with a minimum of supplements.
Picking : The Roussanne is part-picked while still green to allow the remaining grapes a better maturity and concentration. Mechanical picking very early in the morning during September. Destemming, pre-fermentation maceration (soaking) for the Roussane, clarification at 8°C for 36 hours.
Vinification : Fermentation at a controlled temperature (15°C). Aged in traditional semiburied concrete vats covered by Languedoc bricks or in stainless steel vats.
Maturation : Most of the cuvée fermented and aged in new 300-litre French oak casks with regular stirring and then kept for 7 months in barrel.
