Who are we

Maison DODIN traditionally ages its entire Munster production "à l’Ancienne", meaning each wheel is handled entirely by hand on silver fir wood planks from the Vosges mountains. Using pure water, every Munster is rubbed every 2 to 3 days and flipped over during the 21-day period required to obtain PDO status. This is a slow, patient ripening process, masterfully controlled by the affineur.
