Who are we

The Domaine de la Flaguerie, at the origin of the Vergers de Ducy, is a family property located in Bessin (between Caen and Bayeux). Run by Norman enthusiasts, its core business is the production and processing of cider apples into a wide range of products. Nature loving, the family embraces the values ​​of organic and responsible farming, and sustainability. Our orchards and products are certified AB Agriculture Organic by Ecocert. Run by Norman enthusiasts, its core business is the production and processing of cider apples into a wide range of products. Today, René Petrich and Jean, his son, co-manage the business. The estate now operates 40 hectares of cider apple trees divided between low stems and high stems. About twenty varieties, divided into four groups; sweet, bittersweet, bitter and tart, are found in the orchards. It is the balanced blend of these different varieties that produce a good cider. The harvest lasts from the end of September to the beginning of December. The apples are picked in several rounds, and pressed quickly after a selective manual sorting. Apple must begins to ferment under the influence of native yeasts naturally present in the orchards. Once fermentation has come to an end, and the cider contains 6.5 to 7 degrees of alcohol, distillation can begin. The estate has chosen to distil young ciders where the fruit is still very present, using a column still. Then begins the slow aging of alcohol. The barrels used are of medium capacity (400 to 500 litres) with only a third made of new wood, limiting the contribution of wood. The calvados produced keep these citrus aromas, a specificity of the estate. Over the years, the wood (French oak) brings complexity and length, perceptible in the old calvados. The Domaine markets two ranges of calvados, a classic range and a resolutely modern range, Domaine Flaguerie. The latter includes three calvados, 6, 10 and 20 years old.
