This artisan pastry chef has turned his hobby into a profession and constantly innovates with handmade recipes made out of local ingredients. The selection of the ingredients is operated through local producers : the sheep‘s milk cheeses are produced a few kilometers away from the biscuit factory and the chili pepper is from the famous town of Espelette.
