THE VINEYARDS Situated beneath the ruins of the old château, this vineyard has the best exposure in Saint-Romain. The winegrowers have applied for this climat to be classified as a 1er Cru, a matter to be followed up... VINIFICATION AND AGEING Vinified in stainless steel tanks until mid-fermentation, then in barrels to bring out the aromatic finesse. Low controlled temperature (18-20°C) to preserve all its fruit and structure. Aged for 8 months in barrels (no new barrels) from 2019 15% new barrels, to bring fullness and finesse. FOOD AND WINE PAIRING This Saint-Romain will go perfectly with a blanquette of poultry or prawns.
