The vineyard
This parcel is located on a very steep hillside, next to the 1st Cru ‘Rugiens’. Planted in 1950, it produces small yields.
Vinification and ageing
Vinified in temperature-controlled stainless steel vats, fermentation and temperature are meticulously controlled to ensure optimum preservation of fruit and structure. Vinification is gentle, with light punching of the cap and a preference for pumping over. Once fermentation is complete, the grapes are pressed gently using a pneumatic press. The wines are then placed in barrels for the start of the ageing process. Aged for 12 months, 30% in new barrels. For this well-structured wine, the barrel brings depth and complexity.
Food and wine pairing
This Pommard goes well with game and meat in sauce, such as our Boeuf Bourguignon, but also with barbecued prime rib! It can also be served with a Roquefort cheese or a friend of Chambertin.
