Pinot-Gris

Terroir from fragmented plots around Nothalten. These have very varied soils: silt-clay, sandstone, marly limestone, granite ... Manual harvesting, long pressing of whole grapes, static settling, slow & regulated fermentation at 18°C, long ageing on fine lees. Opulent dry white wine, fruity with complex floral notes. Beautiful length, balance based on freshness.
