Grape variety: Red Pineau : 66% of Merlot and 34% of Cabernet-Sauvignon
Maceration: A maceration is realized during 36 hours (48 hours for red Pienau) to get the best concentrations of all aromas and give the body to our Pineau des Charentes. Mutage:
The grape juice (3/4) is blended with (1/4) of eau-de-vie de Cognac (at least 70% volume and 1 year minimum). Adding the eau-de-vie of Cognac with this high alcohol content stops the departure in fermentation, so keeping the natural sugar of the grape
Ageing: Aged in French oak casks (roux and old) for much more than the minimum required by the appellation which is 5 years to get the mention "Vieux"

The Profile A lovely blend (17%vol) of grape juice and eau-de-vie at high strenght of alcohol, aged in french oak casks for many years. More rich and strengthen than the White Pineau, we have a delicious fruity sensation. The Cabernet confers an aromatic power, and the Merlot is rich and bodied. A perfect blend between fruits, structure, acidity and mellowness !
