GRAPE VARIETY: mainly Ugni-Blanc. DISTILLATION: with lees, very slow distillation. Cut made through tasting. AGEING: a few months in “roux” casks, then numerous years in old casks (French Limousin oak) in our own cellars. REDUCTION: slow thanks to a specific process. FILTRATION: very gentle to preserve maximum aromas. BOTTLING : at the estate. This cognac stands out for its elegant yet generous character. It unfolds a beautiful aromatic palette where white flowers, jasmine and vine blossom blend with bright notes of citrus and white peach. Hints of candied fruit, raspberry and quince paste round the flavour profile off, adding depth and a rich, indulgent quality. The finish continues with elegant, subtly vanilla-tinged woody notes that are perfectly integrated. More complex hints of mellow rancio, coffee and liquorice reinforce the character of this cognac, whilst a very fruity, slightly spicy finish brings freshness, balance and a lovely length.
