Our Pays d’Auge AOP cider complies with very precise specifications that
give it its Appellation d’Origine Protégée status, a guarantee of respect for
centuries of know-how.
The Pays d’Auge’s unique climate, its soil, the varieties of apples used and the
way in which they are processed are all closely linked.
- The region’s rainfall favors the sugar content of apples;
- The clay-limestone soil in our orchard, specific to the appellation area, provides
the essential moisture and nutrients required for optimum development
of the apple trees and their fruit;
- Three types of apples (phenolic, sweet and tart) are blended to obtain an
ideal taste balance, faithful to the ciders of yesteryear;
- Finally, the elaboration: our cider is bottled before fermentation is complete.
In the secrecy of the cellar, for at least 6 weeks, the sugars naturally present,
along with the yeasts, create fine bubbles. This is called natural effervescence.
Thanks to its low sugar content, our Pays d’Auge PDO Cider will be much
appreciated as an aperitif or throughout the meal. Its round, mellow character
is a perfect match for all cheeses, and sublimates even the simplest desserts.
