I have more flesh than my little sister "Fine de Claire Vertes". I have been raised in parks for at least 30 months. My green colour is my strength and my difference. My transformation takes place during the maturing phase when I am placed in carefully selected "claires" for 28 days. Small blue algae are present in the water and when I filter them, they colour my gills. Nature's miracle changes colour and makes me unique. This unique maturing technique gives me a seductive colour and lively aromas when I taste it. I'm a surprise for all oyster lovers, with light, crisp flesh and hints of iodine. I'm fleshy and strong.
