Distinctive and authentic, it is ideal for making mustard sauces or basting meat before roasting. Old-fashioned mustard is made using a traditional production process. As its name suggests, its origins date back to Roman times, when the seeds were mixed with unfermented grape juice to baste meat or fish.
The power of tradition
Today, our Old-Fashioned Mustard is made in Alsace. It is prepared using whole mustard seeds, unlike traditional mustard, which is made from ground mustard seeds. The seeds are first soaked in vinegar, then mixed with salt. They are then coarsely crushed to obtain a paste with whole grains. This paste is finally left to rest in barrels for several days, giving it its grainy texture and unique taste. Old-fashioned mustard is often used to accompany grilled meats or sandwiches, and is highly appreciated for its strong taste and texture, which adds crunch to dishes. Rabbit with Old-Fashioned Mustard is a tasty and easy-to-prepare family meal, made by mixing mustard with crème fraîche. Your dish will gain intensity if you brush the pieces of meat with the mixture before browning them in the casserole dish.
