The vineyard
Facing south-east, this vineyard, planted in 1969, has predominantly marly soil, giving its wines great roundness.
Vinification and ageing
Vinified in temperature-controlled stainless steel vats, fermentation and temperature are meticulously controlled to ensure optimum preservation of fruit and structure. Vinification is gentle, with light punching of the cap and a preference for pumping over. Once fermentation is complete, the grapes are pressed gently using a pneumatic press. The wines are then transferred to barrel for the start of the ageing process. Aged for 12 months, 25% of which are new barrels. For this well-structured wine, the barrel brings depth and complexity.
Food and wine pairing
This Monthelie 1er cru goes wonderfully well with duck breast and Morbier cheese.
