Handpicked Mauzac rose, biodynamic and dry farming certified DEMETER.

 

Winemaking:

MAUMA is the result of a very precise vinification process, starting from the picking of the grapes to the bottling stage.   Every step is realised in the most natural way. Mauzac rose being the local AOP Gaillac grape (which at maturation becomes grey-blue) is destemmed directly in cubic open bins, where they naturally start to ferment. After one week, the juice still in fermentation is racked and the skins are softly pressed. All the juice goes back together in a little vat, where it finishes to ferment and is then ready for a long élévage sur lie for six months. Our rendition of the classic orange vinification process and the absolute quality of the grapes, makes it a wine out of the ordinary, with a remarkable finesse and subtlety.

 

Tasting Notes

The nose is delicate with a fruity sensation of green apple, Williams pear and a splash of ripe citrus. The palate is pleasing with flattering aromatic freshness and all the fruits found on the nose. Its texture fulfils the mouth from the beginning to the end with tension and finesse. The tasting ends with a creamy sensation which is the result of malolactic fermentation and precise tannic extraction.

 

Food & Wine pairing

Characterised by beautiful freshness, round middle palate and light tannins, MAUMA goes well with many dishes. It could be the perfect companion for a couple of oysters with friends. This unconventional wine also goes very well with sweet and sour food, especially Asian recipes. MAUMA can be drunk at 12°C to appreciate all its freshness and minerality. Its fruitiness and richness of its palate will develop better in the glass at 14°C.
