Le Cerf
Le Cerf is a gastronomic white wine that perfectly captures the unique characteristics of its terroir.
Terroir and viticulture:
Grown on 10 hectares of sandy, limestone and clay-limestone soils with perfect southern exposure, on the plots known as ‘les bas quartauts’. The vines are cultivated using sustainable methods, with active and thoughtful soil management.
Vinification:
To preserve its delicate aromatic profile, the wine undergoes a long vinification process at low temperatures. It is then aged on fine lees in vats, which enhances its rich texture.
Tasting notes:
The nose is complex and fresh, revealing a palette of fruity aromas with pronounced notes of citrus and delicate white flowers such as acacia and lime blossom. On the palate, it is full-bodied, with lovely freshness, offering a refined balance between minerality and fruitiness. The texture is full and round, leading to a long, expressive finish with lingering citrus notes.
Food and wine pairings and serving:
For optimal enjoyment, serve chilled, between 8 and 10 °C. This versatile Touraine Chenonceaux pairs beautifully with fish and seafood, Asian cuisine with bold flavours, as well as fresh or creamy cheeses such as the traditional ash-coated goat’s cheese.
