TERROIR:
The parcels of Syrah and Grenache are located on clay limestone
hillsides south-south west facing. The Mourvèdres are located on
clay limestone hillsides, south east facing, looking at the
Mediterranean Sea.
VINEYARD:
The vines are grown organically.The vines are trained using the
Cordon de Royat method.The yield is kept at around 35hl/ha
(50hl/ha maximum for this appellation)
VINIFICATION:
Each parcel is vatted separately.Traditional vinification: Total
destemming then alcoholfermentation at controlled temperatures of
26 - 28°C.After regular pumping over, racking and return takes
place at the end of the alcohol fermentation.Maceration lasts
between 15 and 21 days.
AGEING: The cuvée tradition is blended during December.
The Racking that is performed regularly during the first month of
ageing, with airing, makes the wine more refined.The ageing
continues in concrete vats until bottling (before harvest) which
ensures the best thermal stability possible.
TASTING:

stability possible: Wine with a ruby red robe and purple tones. The nose offers intense fruits (blackcurrant, redcurrant) with hints of
violet. On the palate the attack is supple, round and evolved on a good quality tannic structure. Wine to be drunk whilst young or in
the next five years to come. To be served at 18°C.
