The vines are pruned in the winter, then in the Spring, we remove any extra growth. Just before the harvest we remove a portion of the leaves and any of the the grapes that are not of quality. The Harvest is done in the early hours of the morning and harvested by hand each bunch of grapes is chosen for its quality then gently transported. The traditional wine making process is completed under strictly controlled temperatures, the frequecy of the gentle pumping is very important. The fermentation takes between 12 & 14 days to complete. The wine is placed in 400 liters new oak barrels after 24 months it is transferred into a clay amphora and left for 12 months the terracotta is composed of 3earth types.
