Green Fine de Claire

Here, we are talking about a rather unique product, the first ever labelled seafood product, in 1989. The Green Fine de Claire Red Label is subject to demanding, even very demanding, control standards. Its colour, as chic as it is photogenic, is obtained thanks to the presence in the Claires of the blue navicle, a micro-seaweed filtered by the oyster which retains its pigment, called the marennine.
An exceptional oyster, marketed from October to May to respect its reproductive cycle.

The Green Fines de Claire are refined for several weeks in our Claires, where they acquire the typical regional flavours, a superior quality shell compared to oysters only grown in the open sea, and of course their unique colour.

As you do not command Nature, the oyster farmer never knows in which of its Claires the blue navicle is going to develop. Indeed, it will depend on the position of the Claire, the temperature, the number of hours of sunlight. Therefore, you need to carefully monitor the appearance of this micro-seaweed in order to put the oysters at the right moment, in the right Claire, in order for them to become Green Fines de Claire. This is why it is such a rare and unique oyster that only a few farmers are able to produce.
