Flower of salt is hand-harvested from the surface of the water in the salt marshes and is composed of very fine crystals. It is formed by the combined action of sun and wind. This Fleur de Sel, which is naturally white when dry, has a slightly pinkish hue when harvested, and gives off a fragrance similar to that of violets. This is one of the particularities of Fleur de sel, which is very rich in magnesium.
