This preparation for Eggplant Bread makes an original recipe for about 4 to 6 people. Called Papeton or eggplant bread, this great classic of Provençal cuisine remains a must. Fresh eggplant, black olives from Provence and a little garlic, to be prepared in bread with a tomato sauce with basil from Provence. Simply mix the contents of the Jean Martin jar with 6 eggs and 3 tablespoons of crème fraîche, then bake it in a cake pan for 35 minutes in the oven (210°C).
