Dualis
Dualis is a blending of Chenin and Sauvignon Blanc.
Terroirs:
Produced from clay-limestone terroirs, this wine expresses the richness and purity characteristic of these soils, combining concentration and freshness. The south and south-east exposure of the plots ensures good ripeness and balanced aromatic expression.
Viticulture:
Cultivated using sustainable methods and accompanied by regular soil work, the vines undergo partial leaf removal and green harvesting to promote ripeness and concentration in the grapes.
Vinification:
The grapes are pressed, separating the free-run juice from the press juice. After settling, the musts are cold stabilised under bio-protection, without the addition of sulphur, in order to preserve and develop their aromatic potential. The wine is aged on fine lees in oak and acacia barrels.
Tasting Notes:
Fine and expressive, blending fresh citrus, white fruits, and acacia flowers, enhanced by subtle honeyed and woody notes from the ageing process. Lively and tense on the attack, balanced by a beautiful roundness. Full-bodied texture, supported by a mineral structure and a lingering finish with slightly toasted accents. Serve between 8-10°C.
Food and Wine Pairings:
Dualis pairs perfectly with delicate fish (sea bass, pikeperch, turbot), shellfish such as scallops or lobster, and roast poultry with a light cream sauce. It also elegantly accompanies mature goat's cheeses from the Loire Valley or a young Comté cheese.
