EN CHARRON evokes the metal work of the village wheelwright, horseshoes, various tools... having benefited from a flow of iron ore during the uprising of the Morvan, resulting in the appearance of the cliffs at the foot of which our 0.88ha plot is located.
Farming is carried out according to the principles of organic Agriculture since 2008 with due respect to the moon phases. Bio Certification was obtained in 2011 (Bureau Veritas).Tilling the soil is mainly manual.
All phythosanitary products are natural.
The harvest is manual.
Full destemming prevents an herbaceous taste of the stalk. Fermentation is natural, without addition of sulfur, and the must is punched down and pumped over as needed to extract tannin and color.
Over 90% of the harvest is aged for 13 months at least in 228 L high quality French oak barrels - MLT (medium-long traditional toasting).
TASTING
On the first nose, and later on the palate, this wine has spicy notes, then opens up with hints of black fruit. Time will help it to age and open it up aromatically.
For tastings, remember to set the bottle at 18°C
24 hours before the tasting and open it 1:30 hour beforehand.
