Dionysos Pinot Noir cuvée Mateo 2018
Terroir: Wine from our plots sheltered by rain and west winds thanks to the Ungersberg. They benefit from a beautiful sunshine from East to West and a sandy sandstone soil.
Wine making process: We lead our vines in order to obtain the quintessence of our soils, this practice is applied on all our vineyard. We practice Guyot Poussart pruning, manual disbudding, sowing of green manure, we apply herbal teas, decoctions or purins of wild plants. We adapt our interventions to the cycle of the moon.
We pay meticulous attention to the vinification which starts with a manual harvest, then a fermentative maceration, a soft pressing and an ageing of one year in barrels, not filtered at the bottling.
Wine tasting: Red wine, structured, with silky tannins, fruity with notes of black cherries. Beautiful balance, frank and persistent vivacity.
